9th Day of Ridvan

Another holy day in the Baha'i Calendar - the ninth day of the twelve-day King of Festival - on the 29th of April each and every year.
The celebration started from sunset on April 28th and this year, I had the golden opportunity to celebrate it with hubby and friends in KK.

Sino-Thai Restaurant & Bar

The 3sixty April edition

Landed safely in Kota Kinabalu (KK) and having to watch hubby juggling with his appointments 
is no big surprise because rushing from one venue to another venue is always in his diary.
Thank goodness, we still find our way to Sino-Thai Restaurant & Bar for a nice, green dinner :)))
They serve not only Thai cuisines but also Italian.

Hair clips

Besides chocolates, especially from hubby, 
there's definitely one thing that can get some endorphins on the rush!


 
Yes, it's shopping!!!!! So, currently am having an obsession for...... hair clips.
Aren't they pretty?  Am going to collect more and more!
 
 


Another RAI

It has been a year already, after mum had her thyroid removed surgically (thyroidectomy) from her system.

Photo taken last March 22nd, 2011 showing the right side of mum's thyroid, the gland that is responsible in the production of thyroid hormone. 

To my dismay, she still had to be given Radioactive Iodine (RAI) treatment, for the third time, yesterday.
Last she had was 6 months ago in October where she had to stay and be isolated for 5 days in the hospital.
Sigh!~  How much longer mum has to bear all this treatment.  Feeling isolated is one thing.
But then, I read this Hidden Words of Baha'u'llah:

O SON OF MAN!
Should prosperity befall thee, rejoice not, and should abasement come upon thee, grieve not, 
for both shall pass away and be no more.

I am really, really looking forward for that hope!
Hoping that it'll be the last one, last treatment and no more!
Continue to pray for God's will, she'll completely recover!
She will!

Even Nee-Nee also hoping for the same thing....her beloved master will recover!

My First Cupcakes

Thinking of another project the other day.  
~ CUPCAKE PROJECT ~
Maybe I can do something out of my baking skills.  
Baking cupcakes is not a tough job, but to ice/do the topping can be ridiculously awkward. 
I told myself, Just do it lar.....that's how I'll learn

Beat castor sugar and butter first!

add the egg one at a time, together with self-raised flour.  To prepare the whole thing, you need around 175g of flour.



Time to scoop, before bake them in the pre-heated oven at 180-190oC.  Bake for 15-20 minutes.
 
After coming out from the oven............hmmm............


For the buttercream icing.......400g of icing sugar and 200g of butter, beat well.  Don't forget to mix also with a teaspoon of vanilla essence.  If you want to add colour, here I just mix with a little bit of purple food-colouring.

So overall......still need a little of improvement!  I need to lessen the sugar content, same goes with the toppings.  I need to practice my icing skill.  Wait for my second attempt yeah!

Ming Soon Cafe

Excited to have hubby back here in Kuching at last  =)
Yes, finally, he found once again, his Kuching home.  Hahaha!
So we got the yum-yum gulug-gulug hubby-wifey team - Lawrence & Valerie to take us to another marvelous destination for dinner.

Not bad oh!

My Angel Food Cake

The first time I knew about the existence of Angel Food Cake was when I watched Martha's Bake
last Sunday.
So just now, with all the ingredients that include:
12 egg whites (whipped together with sugar and cream of tartar until stiff)
 cake flour (here I use low-protein hong kong flour because the girl told me cake flour and hong kong flour are actually the same type of flour, really??)
and.....lemon extract (just because I thought there was vanilla extract in the fridge)

Oh yeah, sound simple yet quite healthy ah?  
So we can assume that there's no or very less cholesterol but except for the sugar lah.....you can lessen the sugar amount to have it less sweet though
After baking for 35-40 minutes, this is how the cake looks like...MESSY!!!! Hahaha, blame me for not carefully putting the light and stiff batter into the tube pan......

So gonna save some for mum, brother and dear hubby!
