Cheesecake 1st Attempt

I forgot to post about my first attempt on making cheesecake.

Since I don't have an oven at home in KK, I just choose to make a simple one using philadelphia cream cheese and the freezer.

No need to bake, that's the fun part of it!

Have a to buy a new mixer since I don't have one on my own.  Parkson had a promotional sale for the weekend and I only have to pay RM64.00 for this piece of Tefal.  Since I have a RM50 voucher coupon from Parkson as a gift, I bought another toaster!

.......which is less than RM50.00.....another additional equipment to move out to our new rented house!....duh....

Bye! Bye! to my precious Parkson Gift Voucher.......

Bought the necessary ingredients for the classic philadelphia cheesecake including McVities Digestive cookies and natural sour cream; and Wachaaaa!!!!  With all my skills herited from my mum, this is my simple version of cheesecake.  Hubby loves it!

The Merry Birthday

It's her 32nd birthday today, which falls on the holy Christmas Day. 

Welcoming her with not only a birthday cake, but may God bless her with

lots and lots of happiness, together with the most beautiful and greatest gift from heaven.

Marsella turning One!

We were invited to celebrate little Marsella's

birthday bash at her home at Kampung Mangin last night.

So gave her a huge teddy bear as a gift and at the same time,

wishing and hoping that she'll continue to grow 

through the showers of the Lord of surpassing bounty.

Secret Recipe in Tawau

Packed with some activities on the previous night, oh, that was Day 1 in Tawau.....

it was time to return home....

Ooopsss, not exactly home....Roy thought it would be a great idea to de tour to

SANDAKAN 

and stayed overnight in Uncle Chok & Flora's house!

So we only started our journey after having lunch at Secret Recipe, which

we thought the one of the few fast food franchises that was operating during Hari Raya.

By the way, 

Selamat Hari Raya to all the Muslims around the world, especially to my friends and colleagues....

This was certainly the best fish fillet I have had ever enjoyed....

Sharing is caring!  That's cod fish with honey lemon mustard and certainly though hubby ordered a plate, I still have the share.....thanks honey!

Frankly speaking, I have not been eating ice-cream for almost a month.  Why?  I starting to crave on cakes, especially chocolaty cakes......but this Moist Chocolate Cake is not nice ler.......should have ordered tiramisu or indulgence instead, right?!

Roy didn't have rice for lunch, so, he insisted on ordering this to make him full....sweet and sour salad dish and I think they're using thai sauce.....sweet indeed, so, doesn't suit my taste....

After Secret Recipe, we had to find our way out from Tawau, thanks to Maps Google!

From Lahad Datu to Tawau

From the huge hectares and hectares of land covered with oil palm trees in Lahad Datu to the 

third largest town of Sabah, it took another two hours for our beloved Dmax to travel.

Amazing view of how the oil palm industries in Sabah or rather...the huge contributions to our country's economy

Friends Reunited

So had a great dinner at Song Plaza's Secret Recipe outlet with my two lovely friends, Rosaline and Mary ~ still young at heart and continue to look young though having three and two children respectively.

We have not been seeing and chatting together for so long and they never fail to give womanly tips/advices to me which I really appreciated so much! 
They're just so cute!

Turning 30

Chocolate Cupcakes

It's going to be Mother's Day tomorrow!!!

Am feeling so extra special, because I have my mother-in-law to wish this special day from now on....:))

Thank God for bringing me another woman in my life.

Oh ya, in Roy's life as well, of course, hahaha!

The four important women in my life ~ ma, grandma, amah and aunty Ah Jin.  For without them, not sure where I would stand now. 

So I did make some cupcakes dedicated specially to Ma and Amah (So, Amah, though you're not here but I hope you'll be able to see these photos and imagining that you have the cupcakes melted in your mouth :))))

Simple recipe with a little bit of modification since I'm trying to reduce the sugar:

For the Cupcakes

(To make 9 cups)

125g of unsalted butter, softened at room-temperature

100g of self-raising flour, sifted

30g of cocoa powder

60g of dark brown sugar

3 medium eggs

2 tablespoon of milk

12-hole muffin tins (lined with paper cases)

Mix well all the above ingredients and bake for 20 minutes in the oven at 190oC

For the Topping:

200g of icing sugar, sifted

100g of butter

2 tsp of vanilla

1 tbsp of cocoa powder

Mix well all of the ingredients together and use a piping bag with a nozzle that looks like a 6-pointed star, swirl the icing on cupcakes. 

Got myself the nozzle I wanted and ecstatically I managed to get the swirl I wanted on my cupcakes.  Except that I still need to polish my skill lah :))
