Haw Flake Cookies

Bought two recipe books again last week including one that
has a "Little Cookies EARN BIG $" statement on the cover.
Yeah, am thinking of using my baking skill to earn pocket money.  Wondering if I can do that? hmmm....


 So baked "Haw Flake Cookies" just now, at late afternoon until I could feel my sore feet.
Just cream the mixture of 150g of butter, 50g of icing sugar and 1 egg white until smooth.  Then fold in 160g of sieved plain flour, 80g of sieved cornflour and not forgetting, crushed haw flakes (here I use around 6-8 small packs).  Mix all of them into a soft dough.  
We can scale each piece one by one so that they look approximately the same size (but here I didn't!)
In the recipe book, a mallet is used to flatten each small dough but since I don't have the meat pounder, I had to use a fork.  Same thing, I just use it to flatten lightly before arrange them on the baking tray.


So they are baked in a preheated oven at 150oC for 20-25 minutes.  Make sure the cookies are cooled before storage.



Though Felix almost finished a quarter of them, I still have some to be kept in my tuppies for my hubby.

Mum's Day at Secret Sanctuary Cottage Boutique


 

Took mum out for Mum's Day lunch at a private restaurant, surrounded by tropical environment and the relaxing, stress-free sounds of waterfall located at Taman Stutong Indah, Kuching, Sarawak.


Upon entering the place, you'll surely find these at the entrance

Hammock by the waterfall poolside and fish spa.  There are also other facilities for relaxation provided such as the Jacuzzi, steamroom and sauna.

While waiting for our food to arrive, we recharged ourselves with fresh, concentrated carrot juices in which were served without any sugar.

A healthy side of Bidin, cooked with garlic @ RM20.  Apart from Bidin, the restaurant also provide other local delicacies such as Umai and also Pansuh (upon request only)

BBQ Chicken @ RM28.  You can also find other Western dishes in the menu such as lamb and beef.  All freshly cooked!

Chocolate Cupcakes

It's going to be Mother's Day tomorrow!!!
Am feeling so extra special, because I have my mother-in-law to wish this special day from now on....:))
Thank God for bringing me another woman in my life.
Oh ya, in Roy's life as well, of course, hahaha!

The four important women in my life ~ ma, grandma, amah and aunty Ah Jin.  For without them, not sure where I would stand now. 

So I did make some cupcakes dedicated specially to Ma and Amah (So, Amah, though you're not here but I hope you'll be able to see these photos and imagining that you have the cupcakes melted in your mouth :))))


Simple recipe with a little bit of modification since I'm trying to reduce the sugar:
For the Cupcakes
(To make 9 cups)
125g of unsalted butter, softened at room-temperature
100g of self-raising flour, sifted
30g of cocoa powder
60g of dark brown sugar
3 medium eggs
2 tablespoon of milk
12-hole muffin tins (lined with paper cases)

Mix well all the above ingredients and bake for 20 minutes in the oven at 190oC

For the Topping:
200g of icing sugar, sifted
100g of butter
2 tsp of vanilla
1 tbsp of cocoa powder

Mix well all of the ingredients together and use a piping bag with a nozzle that looks like a 6-pointed star, swirl the icing on cupcakes. 

Got myself the nozzle I wanted and ecstatically I managed to get the swirl I wanted on my cupcakes.  Except that I still need to polish my skill lah :))

Aloha Burger II

Remember this?

So went to Karamunsing Food Court again last Sunday for lunch and there,
both hubby and I met Chef Alan Cutner at his burger stall, this time with his new assistant, Wody :)))

As usual, Roy ordered large-sized Lamb Burger at only  RM10 served with salad and fries. 
Have a peek at the juicy, flavourful and fresh home-made lamb patty .........hmmmmmmm..........satisfaction guaranteed on every bite, I'm sure!
I had large-sized chicken burger, priced at RM8 served also with fries and salad.
Another look at the patty made from fresh minced chicken meat.

Happy to see the business is growing well so far.  
Would love to see more customers/burger lovers to not only drop-by but to come back for
more burgers from Aloha Burger which are grilled to perfection and most importantly, Chef Alan really makes sure that the quality of his home-made burger is there!

Wedding at Lembah Impian ~ Bala & Amy

Was rushing from Kota Marudu back to Kota Kinabalu to attend 
another wedding reception which was held at
Lembah Impian Country Homes Resort
(Oh ya, hubby and I had the same venue for ours)  
on the 5th May 2012

Thought that we were late already for the reception but when we arrived, they actually just started to eat :))
