Mix-matched Wedding 2

Indeed another full house on the evening of March 30th.... 
This time at the Civic Centre Kuching, witnessing a chinese-style wedding reception.

Walnut Wholemeal Muffins

In baking mood again tonight. 
Made these cute muffins, and turn out that I could only make nine cups.


Ingredients:

120g brown sugar (I reduced to 70g only)
250ml low fat milk
1 egg
40g melted butter
200g wholemeal flour, sifted with 1bsp baking powder
60g walnuts, toasted and chopped
Some pumpkin seeds for decoration


Method:

1.  Preheat the oven to 200 degree celcius.  Prepare some muffin cups.

2.  Combine brown sugar,  milk, egg and melted butter until well-mixed.  Add in flour mixture, walnuts and stir well together.

3.  Spoon the batter into the muffin cups and sprinkle some pumpkin seeds on top for decoration purposes.

4.  Bake in the preheated oven for 15-18 minutes or until cooked.  Remove and leave to cool before serving.

Chocolate Banana Wholemeal Teacakes

Normally I don't eat super ripe bananas. 
I rather leave them on the table until someone throws them away either into the garbage bin or.......
........into his/her mouth.  So this time, I thought, I would just turn them into a cake. ^^

Recipe from Alan Kok's I LOVE TASY & HEALTHY TREATS

Ingredients:

150g butter (I used the non-cholesterol ButterLite, not golden churn/margarine)
150 g brown sugar (this I reduced into around 100g and still taste sweet)
3 (omega) eggs
300g ripe banana, mashed
150g walnuts, coarsely chopped
2tbsp cocoa powder
150g wholemeal flour
100g plain flour
1tsp baking powder, mixed with 1/4 tsp baking soda

The final mixtures ~ ALL IN ~ before baking in the oven

 Method:

1.  Preheated oven to 200 degree celcius.  Grease the cake moulds
2.  Cream butter and brown sugar until well-mixed.
3.  Add in eggs one at time and beating well after each addition.
4.  Add in the remaining ingredients and mix well.  Spoon the batter into the moulds.
5.  Bake in the preheated oven for around 15-18 minutes or until cooked. 


Now leave to cool and ready for serve

Homestay at Kampung Serasot

Started my early morning journey to
Kampung Serasot, which is one of the many bidayuh villages in
Bau District.  Herlina and I drove for almost an hour to reach our destination with heavy mists
along the 44km road from home.
It was indeed a pleasant arrival with such warm welcome that led me to some
bidayuh experiences and cultures.

So how to make tupik bandung......with tapioca?

...need to grate first the tapioca....

.......then grated tapioca is to be mixed with either a little salt or chilli or sugar

kuali-frying the tapioca leaves with lemon-grass.............my favourite dish :)

So let this aunty teach you how to wrap the rice into the leaf
....looks nice and neat..

First and foremost, the leaf needs to be flamed first to make the folding and wrapping easier

Was finally back home and having to rush to the hospital after landed made my heart pound.
Hoping that the operation went well. 
Yes, indeed mum's fine, with a zillion thank yous to all the friends and families that gave their deepest thoughts and prayers to mum.
