Managed to find the time today to make cookies based on a recipe I took from
The Kitchen Snippets
Ingredients:
160 gm of butter
150 gm of sugar ~ I used brown sugar
1 egg
1/2 tsp of vanilla
220 gm of flour
80 gm of corn starch
3 tbsp of coffeemate powder
60 gm of almond powder
For the glaze ~ just need to use 1 egg yolk and some chopped almond
1) Mix flour, cornstarch, coffeemate and almond powder in a bowl. Mix well.
2) Cream sugar and butter until light and creamy. Then, add in egg and vanilla until well combined.
3) Slow down the speed of your mixer and slowly add in the flour until everything became dough.
4) Lightly dust the work surface with some flour and roll out the cookie dough to about 0.5cm thickness.

6) Brush the top of the cookies with beaten egg yolk and sprinkle some almond on top.
6) Bake in a pre-heated 350 degree F oven for 15 minutes or lightly brown. Let cool on wire racks.
